YOUNG chef Bryce Gabell started life out as a vegetarian – by his late teens he was a butcher’s apprentice and now cooks a mean crispy pork belly.

Mr Gabell dropped out of school in year nine and in the years following cooked up a storm – opening three culinary businesses that have added flavour and depth to the Central Victoria foodie scene.
Mr Gabell operates Bryce’s Bistrot in Talbot, The Flag Bar and Lounge in Maryborough and The Clunes Butchers.
in 2015 he was awarded the The Central Goldfields Young Business Achiever Award and has hosted celebrities including Premier Daniel Andrews.
The Jamie Oliver food revolution ambassador is passionate about promoting the Central Goldfields to the rest of Victoria and loves using local produce.
“I love cooking and knowing where the food comes from,” Mr Gabell said.
Mr Gabell loves the community-feel of his restaurants. He says they are big enough to make a difference and small enough for him to be able develop good relationships.
